Well it was great getting back to work and to do some cooking! I had a great day in the farm kitchen, cooking up some chicken breasts, talking to customers, and chatting with Mark about his amazing chickens. His chickens are pasture raised, and are allowed to grow to a larger, more natural weight(ranging from 6-9lbs each)! I love this! I can actually feed our family of 4, and have leftovers for a another couple of meals. Too many times we get smaller chickens from the grocery store and it never seems enough, especially with 2 growing boys (18 and 22 years old). I used this chicken in the restaurant as well. It was one of the only chicken products that I brought in that really got a response from the customers, things like “were did you get this chicken from” or “this chicken tastes like the chicken we raised on our farm growing up”. I think what impressed me the most about my day there was just listening to the customers coming in. People were driving out from as far away as UBC because they love the chicken so much. There were customers coming in who have come for years, it was almost like they were coming into Mark and Kathy’s home for a visit. They were catching up on life’s events and talking about the farm, I felt like I was in the middle of a reunion of extended family! To have a following like this speaks volumes about their product, and about Mark, Kathy, and Jill as people!
Thank you for letting me run loose in your kitchen!
