Feast of Fields 2016

I have always enjoyed being part of Feast of Fields when it’s held out here in the valley. This year I was definitely not going to miss out as it was being held on two of my favorite farms; Glorious Organics and Laurica Farms. I also jumped at the opportunity to be able to feature both pork and vegetable from Laurica Farms-creating a pigs head taco with tomatillo relish, feta creme, and pickled vegetables!

It all starts with amazing produce, and Laurica Farms is definitely one of my go to farms for that!

Pickled cabbage, garlic scapes, and zucchini gave the taco a nice crunch!

We brined the pigs heads, then slow roasted over briquets and wood. They were so tender, rich, and smokey! You’d be amazed by how much meat you can get from a pig’s head.
