Fraser Valley Cider Co. brined K and M Farms turkey breast

 

1 x 5lb turkey breast roast

 

For brine:

1 cup Kosher salt

½ cup brown sugar

2 T whole black pepper

2 T whole coriander

2 T whole mustard seeds

12 thyme sprigs

4 cups cider

2 cups water

 

Combine brine ingredients, bring to a boil, simmer 3-5 minutes; cool completely

Add turkey breast and weigh down; brine overnight, remove from brine, pat dry, and roast to 155 degrees. Allow to rest 10-15 minutes before carving
