Apple Butter

 

4lbs apples, peel on, core intact, coarsely chopped

1 cup apple cider vinegar

2 cup water

4 cup sugar (approx)

Salt

2tsp cinnamon

½ tsp cloves

½ tsp allspice

Grated rind & zest of  1 lemon

 

Combine apples, vinegar & water.  Cook till soft.

Puree in blender & strain.  For every cup of puree add ½ cup sugar.  Add rest of ingredients, cook till thick and smooth.  Approx 1-2 hours.
