Apple cider brine

4 cups apple cider

5 T coarse salt

1 tsp whole black pepper

3 cloves sliced garlic

2 T honey

2 sprigs rosemary

4 cups water

3 slices ginger


Combine ingredients in pot, bring to a simmer, simmer gently 3-5 minutes. Cool completely before using. When cold add up to 6 lbs meat (chicken, turkey, pork work great) and brine overnight in fridge. Remove from brine, pat dry, roast or grill. Brush occasionally with honey cider glaze.


Honey cider glaze

½ cup honey

½ cup cider vinegar

1 sprig rosemary

Combine in pot and reduce till syrupy
