Garlic Scape Hummus
Ingredients:
3 x 15.5oz tins chickpeas, drained and rinsed
1/2 cup chopped scapes
3/4 cup tahini
zest of 2 lemons
juice of 4 lemons
1/4 cup water
1/2 cup extra virgin olive oil
1 1/2 tsp cumin
1 1/2 tsp sea salt
1/8 tsp cayenne pepper, or to taste
Procedure:
Place all ingredients in food processor and process till smooth
Yields approx. 5 cups
