Garlic scape and oregano vinaigrette
Ingredients:
8-10 garlic scapes; chopped
2 T chopped fresh oregano
1 2/3 cup olive oil
1 1/4 tsp sea salt
1/4 vinegar (red wine or balsamic works the best)
juice and zest of 1 lemon
Procedure:
-combine all ingredients in blender; process till smooth
Yields approx: 2 1/3 cups

Such amazing colour and a vibrant flavor with this vinaigrette. I see this being paired with a roasted chicken breast over a warm grilled potato salad with feta cheese, olives, and roasted peppers!
