Grilled Peach and Blue Cheese Salad

2 peaches halved

Olive oil for brush peaches

½ cup diced blue cheese ( try the castle blue from The Farmhouse cheese or the Jersey blue from Golden Ears Cheesecrafters)

4 handfuls salad greens

1 large shallot minced

2 fl.oz. balsamic vinegar (try with the Traditional style dark balsamic from All of Oils)

½ cup extra virgin olive oil ( I recommend the Frantoio E.V.O.O. from All of Oils)

  • Brush peaches with olive oil and season with salt and pepper, place on preheated grill and cook 3-4 minutes until grill marks form
  • Combine balsamic vinegar and shallots; season with salt and pepper; slowly whisk in oil
  • To assemble; place a grilled peach in center of plate; top with greens, drizzle with vinaigrette and top with blue cheese
