Garlic scape, kale, and pine nut pesto
1 1/2 cups kale, roughly chopped (remove stems)
2/3 cup toasted pine nuts
1/3 cup chopped garlic scapes
1/3 cup basil leaves
1 tsp salt
1/2 tsp pepper
zest and juice of 1 lemon
2/3 cup olive oil
- place everything in food processor and process till smooth
Yields approx: 1 1/3 cups
Garlic scapes are only available for a short time. Take advantage of them by making several recipes of this pesto and freezing it for later in the year!
I have left out cheese in this recipe, giving you the opportunity to explore different combinations yourself. Parmesan cheese, feta cheese, fermier cheese would work great to toss in with your pesto. Or you could add this pesto to some chevre or fromage frais for a great spread!
