This such a nice snack to have on hand and will hold for a week or so in the fridge. I also like to add this to a salad, you could chop up the olives and use a bruschetta topping or toss with you favorite tomato sauce for a quick pasta dish!

Marinated olives (yields approx. 2 cups)

250 gram olives

2 T gremolata olive oil (available at http://www.allofoils.com)

1 clove garlic minced

4 oz feta cheese, diced

½ – 1T red wine vinegar

Pinch ground pepper

  • combine all ingredients and allow to sit at least 2 hours before serving
