Peach chutney

2 T neutral flavored oil

1 cup finely chopped onion

2 lbs pitted and diced peaches

2 T curry powder

½ cup dried fruit

½ cup sugar

1/8 tsp salt

¼ cup apple cider vinegar

½ cup water

Sauté onions in oil till translucent, add remaining ingredients. Cook gently 30-40 minutes till reduced and peaches begin to break down.

Chutney best made several days in advance, allowing the flavors to develop.
